It is so mentally tough to re-climb a near impossibly difficult mountain you've already just scaled. That's why a manager needs to almost totally freshen a title winning team in the off season.
The Leicester players, in their minds, have already 'done the job', and cannot be up to doing it again.
Similar happened to Chelsea last season.

I've said numerous times the way they play is PERFECT for Europe. They're not pulling it off in the league this year but still, they could do something awesome.
