Impossible I know, but would like to see your 6 Jazz immortals. I have gone for these.

Duke Ellington.
Thelonious Monk.
Modern Jazz Quartet (John Lewis)
John Coltrane.
Charlie Parker.
Miles Davis.

Even As I write this, I could comfortably add another 25 artists.

Can't really argue with that, to be honest. A few others that come to mind are Stan Getz, John McLaughlin, Wayne Shorter, Herbie Hancock, Milt Jackson--okay, yeah, i agree, it's easy to think of an additional 25 or so. We haven't even touched the bassists or drummers.
 
What I like about jazz is the way a great artist will take a melody and experiment with it, finding new strands and avenues to go down. The classic of this is Coltrane and My Favourite Things - not a song you'd associate with a sweaty smoky jazz environment - a tune he was intrigued by. It's different every time I've heard recordings of it by him.

Many of the Jazz greats loved playing 'show tunes', Duke Ellington even messed about with Mary Poppins, if you pardon my expression.
