Had a long weekend - Bank holidays are ace, aren't they?
Usual shizz today, mate. Just about to roast me veggies for mediterranean style roast veg with cous-cous for me tea. Oven on & roasting dish with a splash of sun-dried tomato infused oil, in!
10-15 mins and the veg goes in the roasting dish, 20 mins later it's tea time. Sorted!

It was mate - but I made far too much. Eyes bigger than me belly. Looks like I'll be having some more tonight and the rest tomorrow. If not it can stay in the fridge for a few days...Keeps well IIRC.
