The English version is that it's the two fingered V sign that came about as the French would remove the two fingers to make drawing the bow impossible. So at the end of every successful battle the English bowmen would "salute" their French opponents as they withdrew from the field of battle.

Makes more sense than the 1 finger version. Pretty sure you would never draw a bow with only one finger (certainly you are taught to use two in archery nowadays), and if you were missing your middle finger the ring finger would work just as well.
