TBH just grow them next year ....My freezer is already overflowing at the seams. I'll look at other ways, i.e. : putting carrots in layers of soil, compost or sand.

Definitely making more next year, as this one turned out boss - my uncle's the family homemade alcohol specialist (and alcoholic, as all Balkan families have one) so we've got instructions for variations of many things to be turned to various spirits 
Joey may disagree but I grow varieties that are not often seen in the shops e.g. Pink fir apple. They make a change from the norm, especially as a salad potato.@Joey66 , I'm thinking of planting some seed potatoes, is it too early/late, or just the right time ? Any advice on varieties ?

There are early - mids & lates - the early are what you know as the new potatoes which IMO the best - then mids - all come from Scotland as they are certified as being virus free - you choose the description that may suit you & your family best - and earth them up well to maximise the crops - you can grow them in big pots or double bin bags if you only have a small space etc ....Joey may disagree but I grow varieties that are not often seen in the shops e.g. Pink fir apple. Mid to the end of April depending on the outside temperature make sure a mid temperature is forecast as you will gain nothing if the ground us too cold & wet make sure you let them sprouts in the warm light greenhouse or kitchen inside window sill first for a heavy crop etc sprutting them does work before planting in deep rows soil left high for earthing them up ...Cheers.
