Why not just use a dry sherry? I'm no expert but vinegar does not sound right.......

CBA buying a bottle of sherry just to make char siu. Have just been looking at online recipes, some say you can use rice wine vinegar & others say just rice wine....I'll risk it with the vinegar, I think
