Still the morning hours here in Asheville so for breakfast I will be making huevos rancheros. Two fried eggs served over black bean cakes, chorizo, feta, green tomatillo salsa, and spuds.
 

Homemade guacamole is wonderful.

Mushy peas are sound with fish and chips, but not much else.
Indeed, I prepare homemade guacamole every week and it is so delicious. Aldi's has the best prices for avocados here in the US so everytime that I go shopping there I purchase between 10-15 avocados. I pretty much eat one every day. Peas no so much but my daughter likes them so maybe she would give mushy peas a try too.
 

I absolutely love Paella but have never dared to make it myself. Any good recipes you suggest?

My father in law made it. We ate a couple of hours ago.

I think the main thing is the 'paella' pan.(You know the wide shallow pan they use to cook it) and the special gas ring burner to cook it so the heat is more evenly distributed. With a normal cooker/stove the rice will be over cooked in the midle and under cooked around the edges.

Here in the US most stoves are electric very different from Colombia where gas stoves are the most common. I'm thinking the main issue with paella is making sure the rice is perfectly cook, not too hard not too mushy. I have wanting to make one for a while so I may venture into cooking this tasty dish in 2021 :)
