What Makes a Good Pub ?

Loads of places like this now, I’m not sure why people who own dogs want to take them everywhere with them. There’s a dog friendly pub in Crosby, we went in there the other week and it stunk of dog so we got off.

The owners are limiting their business to people who love dogs, anyone who doesn’t have one will notice the smell and want to leave.
 

I prefer bitter so like a pub to have a reasonable bitter on tap. As happened in the past to mild far too many pubs do not serve it anymore, the nearest "choice" often being a pale ale (as long as it's not one of the citrus ones). Basically I am looking for a pub that has a recent choice of drinks. NB not John Smith's or anything similarly ghastly.
 

Low ceilings, quiet and friendly banter, warm in the winter, off-street outdoor seating in the summer, friendly but cynical staff, eccentricities and other oddities on the wall or elsewhere, a general shunning of the average loud-talker who likes crap beer, well-behaved dogs are a plus but poorly behaved exploratory dogs: nope, and no live music is also a plus as it is usually too loud, too boring, and too predictable--I don't care how good you think you are: save your "quirky" acoustic cover of "hold me know" or some dumbass preachy folk song about life lessons for your basement or your own party Jack!--I'm trying to chat with my friends here.

I do not mind on-street seating in certain places (Kas in Turkey springs to mind) as we can enjoy people watching as a part of the evenings entertainment. NB not in the UK though!
