Why if I move my neck after a few moments of inactivity there is all manner of clicking noises where my head meets my neck.

Crepitus. Lower Cx spine/CT junction possibly.
Any pain? Numbness and tinging? Shoulder pain?
Possibly just age related degeneration of the neck.

Sounds like Cervical spondylosis mate.
