Everton played as Evertons new style dictates. Liverpool played to beat Everton. Herein lies the difference.
Just as a note, I probably would've gone with three at the back after a while, close down the midfield to not allow them the time to counter so quickly, put the pressure on them. Also, when playing 3 at the back, you tend to have 3 CH's back at all times, with support from the wing backs and deep ying midfielder. Would more than likely meant we'd of ended up with better numbers defensively to deal with their counters.
