Seriously? I love tequila but have never tried making guacamole with it. Taking shots along with it that I have done plenty of times lol
I spent time in Mexico some years back and lived with a family in Guanajuato for the first month. It was how they made it and it was delicious. It was pretty much sneaked into any dish possible!

There are plenty of recipes online.

 

I FORGOT THE DAMN JALAPENOS! THREE TIMES I went to the store thinking about this and forgot them ALL 3 times. Soon as I came back I saw the ingredient and did a mild scream.
It happens to the best of us lol I wouldn't stress about it. There have been many times that I have make mine without it and still was yummy.

Are you still making chicken wings? We woke up with a few inches of snow soy hubby is having second thoughts about grilling some later today. That's when the air fryer would come handy.

Oh yeah, I am absolutely doing the wings. I dunno how you make them but I stumbled across it accidentally to do a 50/50 flour/cornstarch with spices and just dump the wings in there. 12 minutes in air fryer at 360 or so, flip them, another 12, they are PERFECT! I have a mate who I convinced to get an air fryer and he was going to do them naked, do them a different way, etc but I got him to try the wings with the dredge and he was raving about them.

I'm doing just a "normal" hot wing sauce and then another dozen or so with a Carolina Gold sauce. My wife and I had wings up in Albany NY that were AMAZING called 46karat wings and we've never had any anywhere near that again. Hoping a bit that the sauce I got matches up.

How fun, I love Mexico people are so nice and best pork tacos I have eaten in my life I had them there. I also love tequila, my drink of choice if I want to have an ebullient night. I'm going to search for a good recipe, now you have open the next pandora box when it come to using tequila for cooking :)

Guanajuato...that brings me back. Spent 4 years of my childhood in San Miguel de Allende. We used to go to Guanajuato quite often. I assume you saw the mummies?
 
Found this old recipe on my computer. I remember making it about 8 years ago or so. Delicious:

Chop Calamari tubes and tentacles.
Saute in hot pan olive oil, let sear
Add shallots/garlic
Add chopped heirloom/cherry tomatoes
salt/pepper
let cook for a bit
add Pastise liquor and flame
add clam broth.

Add squid ink pasta and toss.
Plate and add chopped chives/chopped tarragon/red pepper flakes
Thanks, Rich! Seems like another pasta recipe that I will be making soon. I don't use Pastise liquor regularly can it be replaced with something else?

Hmm...you could probably omit it. But substitutes are hard to come by since not many people have a bunch of anise-flavored liquors in their cabinet: ouzo, pernod, absinthe. I suspect dark rum would probably be the best substitute.

Would the missus be having some or is she still a vegan?

My husband usually grills wings on the charcoal grill but before doing so he puts them in the oven for 15 minutes so they get cook some and once they are on the grill their tender skin won't burn but will crisp just enough. He marinades them with garlic and spices a day ahead and then while grilling them he baste them with his preferred hot sauce. He likes the traditional hot wing sauce but also makes a batch using a blueberry chipotle sauce that we purchase from our local BBQ restaurant. It is just snowy days like today that it is harder to grill out and that's when I wish we had an air fryer so I may have to use the blow-dryer tip that @Diogenes the Cynic shared a couple of weeks ago.

Hmmmm I have the perfect substitute then. Aguadiente is a anise liquor originally from Colombia. We usually have a bottle of it for our gatherings, is either aguadiente or tequila when partying with my Colombian family lol
