Emirates flies directly north out of Dubai to get to LA/San Fran and Seattle.

There's not many routes that need to cross the pole, but those three definitely do. (I'd imagine it's the same for Etihad and Qatar, too)

There are aircraft that routinely operate over the poles and have done so for many years.

The South Pole is covered by the British Antarctic Survey who conduct scientific special operations



And the North Pole is covered obviously by Santa with an air freight operation based there.
