OK...I have a hankering for eggs, les oeufs, specifically poached eggs.

Never been able to get the hang of them however, always end up fishing out white bits from the water before going down the plug to stop it blocking - pain in the backside.

I realise I could just google it, but I'd like to know how the forumites do it. Also you international members give me a flavour of local method!

They always break up a bit. I think it's totally inevitable but a bit of vinegar in the water holds them together better

Actually, I've just realised that I've never poached one without vinegar in the water so I have no idea if it makes a difference. I just always assumed my mother was right.

Bring the water to a boil, add white wine vinegar, crack egg into a glass, get a whirlpool going, pour egg into whirlpool .. 3 mins done.
Vinegar helps the egg to coagulate

This to the point, exactly how I do them.

Interesting. Only had a poached egg once; think it was badly done.

Might have to try this.

Except I have no idea where you'd get white wine vinegar around this neck of the woods.
