Well, when not drilling or doing maintenance, watch movies on the mess decks or lounge. We had about 8 PC's on a mini-lan set up in the crews study and we played lots of multi-players games on them. But I had the ultimate in rack set-ups (rack is the term for bunk). I had an outboard (it is oriented parallel to the beam, all the way outboard, about 2 feet from the hull) rack that had cable runs. So with creative use of cardboard and duct tape I created shelves. On these shelves I had my xbox and ps2. They fed into my 15" lcd flat panel monitor that I had modified so it sat in place and didn't move, regardless of the angles we took. Mine was the most sophisticated set up as it was permanent. The other guys in my bunk room had their own setups, but didn't match mine. xbox was the console of choice and we set up our own lan, so we would spend hours of off-watch time playing Halo multi-player.
I also spent a good few hours on Morrowind there. I would level up my sneak skills by going into a room with someone sleeping, and rig my controller so it would sneak into a corner and continue sneaking while I was on watch. 6 hours at a time. Hoo-yah!
I also read a LOT of books when I was underway. A lot.
