Bit of a curry lover myself. Must admit though with all of the boss curries around, i am not ashamed to admit that i still class this as one of the nicest.

A good phaal is hotter than a vindaloo but with much more flavour and texture. Obviously, a vindaloo can have those two, but usually less so or none.

I love curries and have experienced some amazing ones here and abroad, but a mate (ex-Gurkha) makes the best curries I’ve ever had.
Don't think I've had a good Phall tbh. The ones I've had just taste of tomato and chilli and are like licking the stove. I love hot food, I regularly cook with Carolina Reaper chillies, but never had a Phall that's done the biz for me. Would take Vindaloo over it every time.

Think that's true of a great deal of the curries we get over here, either that or they bear little resemblance to the "originals".
 
Two things changed my curry making prowess.

Buying a tawa pan to make perfect, amazing breads.

And making a big pan of curry base once a week with white cabbage, onion, garlic, ginger, carrot and various spices. Blitzed up it then gives curry that special texture that I was only getting at restaurants before.

Oh and achari curry is the absolute business.

Thank you. I've just sat salivating for about 20 minutes over his youtube. I've already had my tea tonight or I'd be ordering one. Gonna make one tomorrow I think. I always used to prefer Chinese (despite loving curry) but the last few years Indian has taken the lead. I'm still rubbish though. A Madras is about a shot as I can get and I can only get it from one takeaway near me (The Anmol if anyone knows it) because Madras from anywhere else is too hot. I know, what a wimp.

A Madras is a good marker Paddy, you're right about the varying heat from different restaurants though.
