This happens all the time with centralized exchanges - not your keys not your crypto

Apologies for the basic question but I am new to all this Bitcoin malarkey.

What is the best Cryptocurrency to use if I wanted to, for instance, hire a Russian Mafia "technician" to do some work on elderly Italian living abroad? Do the Russian's contact you on purchasing their funny pretend money? or does the Currency exchange send out a young Czech heroin addict with the Mafia's "menu" on request, and you choose from there?

If you need/want to convert your crypto to fiat would you typically use an exchange to do that? If I understand it correctly there are theoretically a couple of other ways to make the conversion such as a bitcoin ATM but I‘m not clear on how feasible in practice they are.

I just withdrew £250 from coinbase and it was in my bank account within a minute.

Sometimes that service may be down but that's like going to a cash point and it's not working. 24 hours later and it probably will be.
