For maximum height Yorkshire puddings make the batter with equal amounts of egg, flour and milk. Add a pinch of salt too. Preheat the muffin tray with a teaspoon of goose fat or vegetable oil until it is smoking. 230oC works for me. Pour in the batter as quickly as possible and put in the oven.

Do not open the oven until they are ready. 10-15 mins

Add a dash of very cold water to the batter. Makes them rise a touch more.

If I combine both tips will I get skyscraper Yorkshire puddings or what? lol

I know nothing but the basics of cooking and I'm ashamed, as my mum's a chef. To be honest though I've not put any time or effort into learning, I'm sure I'll get quite average at it really quick if I tried.

I don't know why the addition of a dribble of cold works, but it does. If you make the batter overnight and give it a quick whisk before you use it there won't be any lumps of flour left

Before you sqeeze a lemon, put it in the microwave for a few seconds then roll it on the counter, will release more juice

My wife is an excellent cook and she loves cooking special meals which is great. One drawback is that when we go out for a meal I find myself thinking I have had better at home. So my cooking tip is "don't marry a good cook as it spoils going out to eat".
