Basically cauliflower baked in a cheese sauce (milk, butter, flour, cheese and mustard if you’re feeling adventurous)
Cauliflower with a cheese sauce. Baked to be all crispy.

A cauliflower, if you dont have them in Merica, is a , blimey, difficult to describe actually.

Kinda like a massive broccoli, but white, and more tasty.
I grew up eating cauliflower made like that in Colombia, well except for the mustard.

Here is the US cauliflower is also plentiful so I cook it regularly at home very similar to the way you all make it.

What cheese though? In Colombia we use mozzarella

I used cheddar. Can use blue cheese if you’re feeling wild. Not me. Blue cheese is gross. Didn’t add enough salt and pepper

Cheddar, with a touch of any blue cheese for a kick,
I eat blue cheese in some salads it can be tasty but it is definitely not my favorite cheese, and I absolutely love cheese. I may have to try it making the cauliflower with cheddar next time but I'm not sure if I would add the blue cheese to this dish
