Shatner's version of "Common People" takes some topping. Incredible stuff.
 

rosalie thin lizzy, cover of bob seger song jigged about love it live and on the at the bbc thing they released last year , whiskey in the jar (more a rearrangment) aswell
evil woman by black sabbath cant think of any others of the top of my head that i like that havnt been mentioned suppose alot of led zeppelin were covers as they nicked loads of old blues songs and babe im gonnaleave you was by some woman

These do some great covers, so different from the original if you just listen to the track it takes ages to identify the original.
