Work grievances

Document the lot, especially the 'redundancy consultation'. If they are gearing up to cut a few, the decision has been suggested if not actioned fully yet. Get every detail, conversation, email, txt message you can. Because if they try it on again, they're breaking the law again and there are some powerful forces that live for new mums penalised for having children. It's misogynistic, it's harassment, it's against labor policy, it is illegal.

Bury them if you can.

Very gently try to paper trail (email chain) them re admitting the meeting notes are not complete. It'd be very helpful if the boss (your better half) could quote perfectly. Even just a few lines or phrases. Once you have a bit of leverage, then you can dig in.
When they say no further notes are available, there is a choice, ...
"seeing as previous meeting notes have been doctored to omit certain law breaking aspects, I hope you don't mind that I audio record every meeting hereon for my own records. Thanks".

This is the hard faced option. A tough line to walk.

Like a certain other entity I have spectacular distrust of, the authority doling out criminality to you and yours are relying on you being ignorant to the law and trying to cajole your better nature to overlook their law breaking. Hammer them, bankrupt them.
