Cholula is the queen of chili sauce. I'm going with hummus though. I know, it sounds wrong, but they serve omelette with hummus in the Coffee Lodge on Lodge Lane and now I'm hooked.

can you elaborate, I cant understand how an omelette is improved by a weird smooth but almost grainy dip

I'm not sure that I can, it makes no sense. But just try it. Something about the cold hummus and the warm omelette just works. Or my tongue has died and I'm yet to realise it.

If you haven't put enough cheese on your omelette that the cheese itself is like sauce, you're doing it wrong.

well I don't think im going out of my way to do it like, but next time im making one and shes got hummus in the fridge I may consider it, and even then I probably still wont have the alans to do it haha
