Nope, quite simple actually (well, in theory)

3 tblspn flour
3 tblspn drippings
2 cups broth/wine

Mix dripping and flour into a paste in a pan. Cook until brown. Slowly whisk in broth/wine. Voila!!!
 

do you eat turkey at christmas as well then ?

don't think i could handle 2 lots of turkey and leftovers. i'm gonna get a goose i reckon this year for a change, goose is more traditional than turkey, and i've never had it.

i do like a feast myself, but turkey is probably my least fav roasted thing.
full roast after the derby on sunday, Lamb the best of all, and n.z lamb at that.

Brined Turkey (booby for me)
Garlic Mash spuds
Green Bean Casserole
Roasted Carrots and Parsnips
Cornbread Stuffing
Cranberry sauce
All covered with my superb gravy

Followed up by my super secret recipe Classic Apple Pie (got it off marthastewart.com) covered in fresh whipped heavy cream.

Dylan, were you at our place? Great menu - trade the roasted carrots/parsnips for roasted brussel sprouts with apricots, craisins and almonds and throw some rosemary into the garlic spuds, same meal.

You are a man of great taste.
