To poach eggs perfectly get a square of cling film, butter one side, break the egg on to the buttered side, gather up the corners and twist to seal, best if you get the air all out place in boiling water with the twisted ends of the cling film out. You can lift the eggs out to check them and cook to perfection. Try it out and see if you agree. Mrs C does them this way, wouldn't work with tin foil.
