Suspect this would be true for most cheeses, swerve the supermarket stuff if you can.

I thought I didn't like blue cheese until I tried it on a panini along with some chorizo slices

the pressing of the panini on the heated grill seemed to open up a whole world of new flavours in the blue cheese, vapours and textures I'd never experienced before came emmanating forthwith astounding my nostrils and tastebuds, it was basically like the psychedelic trip of cheeses

it now gets my vote

cheddar is the best though, no question

A good mature cheddar, by a mile. The others are too bland. Love a crumbly Cheshire or Lasncs, too.
