If you're talking homemade they would have to be twice cooked only.

Always do homemade chips (medium cut). Medium rare steak...and whilst steak is resting, saute finely sliced onion rings in the steak flavour imbued pan, some peas and/or mushrooms and a little red wine.

and a touch of hot English mustard

If its a decent cut of meat, it has to be cooked blue. Fit as ****.
