Anyone got one? Thoughts? Recipes?

Bought one on sale ages ago and only done one thing in it so far. Was very nice though, several ribeyes cooked up while we were out shopping, just finished in a cast iron skillet for one minute each before serving

I had my first sous vide steak on Valentine's day and the fat was just amazingly delicious and a perfect texture. One of the nicest steaks I've had.

Don't know if I could be arsed getting a vacuseal machine just to do it at home though.
 

My buddy uses one all the time. He'll marinate and vacuum pack a bunch of chicken breasts, then take them out and slow cook'em and finish them quickly in a hot hot pan to give them a sear. I sampled his cooking...definitely way way better than cooking a chicken breast on the stove. Very tastey.

I just used a regular ziplock bag and water displacement method, CBA buying more machines
 

A cheap alternative is to cook 'en papillotte', in a paper or foil pouch, put your stuff on the foil, bit of oil, stock or herbs in, fold the edges together and scrunch them tight but not wrapping the stuff, the slower the cooking concentrates the flavour.
Be careful opening as it lets out a bit of steam. Works well with fish, chicken, veg and better cuts of beef and lamb.
