So, you don't just flip it in the pan?
Never. Scramble to a nearly solid state (still a tiny bit runny on top, works better with the cheese), then throw the cheese on, put under the grill until it's melted and the egg has fully cooked). Fold and serve.
 

Made in the pan for the first time yesterday. Didn’t mix until they hit the pan, no milk or salt and pepper. Cooking on a medium heat, then taking off the heat and alternating. On a nice bagel with Frank’s buffalo sauce. Was absolutely ace.
