When using the forums am I better quoting or replying when (this may answer my question for me) ‘replying’ to someone else? I don’t really know what the difference is

Hit reply if you just want to respond to that particular post.
Hit quote if you want to store that particular post, along with multiple others if you wish, and then add them to a new post.

There are two aspects to this.
So on the old forum software, if you wanted to highlight a particular part of a post to reply to you had to literally reply to the whole post and put the bit you wanted to specifically reply to in bold, italic, or underline it or whatever.
The reply feature lets you select the post section without the whole post.
The quote feature is when you want to add many quotes in one reply, as in when vaulting people.
