Agree with the OP that we are light in players in their prime, though there is Mirallas to add to the peak list as well.
Last season was something of a perfect storm with several youngsters performing relatively consistently and old stagers maintaining their level. For whatever reason (perhaps just normal) the youngsters have been less consistent and a number of older players have fallen off a cliff performance wise - all leading to a poor season.
In terms of filling the gap, as others have said. Peak costs a lot of money, so we are realistically looking at getting in a players who can be a 7 out of 10 week in week out - but to be honest we need that sort of consistency to allow the youngsters more space to make and learn from mistakes.
Best case scenario is finding a gem from abroad i think who somehow flys under other clubs radar and adapts quickly to the league. Other than say Lennon I can't see us finding many proven premier league players who will improve our squad - Cant think of any centre halves to replace Distin/Alcaraz for example.
If Kev went I wonder whether we could attract Walcott - probably not after this season sadly.
