They heli-vac a couple locals and tourists off Camelback Mountain here damn near every summer from heat exhaustion and it's a fairly simple hike smack dab in the middle of metro Phoenix.

They were probably eating Pretzels.

Getting lost in the desert is grim; you'd do well to last more than 3-4 days without water, even less if it's summer and you're trying to foot it out. Best bet is to stay put and hope you have something to start a signal fire, something to actually light on fire...and some shade.
