I don't think that video sets a good example to a beginner (it doesn't suggest it's a technique you can reach over time, it suggests that's how it's done from day one). Flinging them about like that will screw up a novice in minutes. You seem happy that he has a good technique, that's cool, but from what I've seen, the way he's wazzing them between his legs just looks so wrong.
The main injury concern is always a break in the lumbar region, particularly in the lower back. He's totally fine in that area.

As for beginners, it's a co ordination and flexibility thing. Of course a beginner isn't going to have the same level of skill. That doesn't mean one shouldn't look to progress quickly provided there's no break in technique and you're able to adapt to the skill quicky enough.
When lifting the weight is pretty irrelevant, to a point, safety is always about technique. You can injure your self with 100kg on your back, you're just more likely to get away with sloppy technique for longer.
