Having them for Sunday lunch, what sauce would accompany them?

I'd lather them in Tabasco Chipotle tbh, that works with everything.

tbh, Kangaroo steak's, like Ostrich are naff.
If you want a really lean steak then go for Venison steaks. Smother them in olive oil and ground black pepper, leave for a min of 2 hours and then flash fry them on the medium side of lean. Keep 'em warm, add a bit of red wine to the juices, add a bit of cornflour slaked in H20 and reduce, throw in some single cream off the heat, job done.

If you're Bruce, or a posh tw^t, add some juniper berries to the juices. No sauce required. Up North, it's called gravy, down South it's Jus darling.
