Ok folks, tonight is Indian takeaway night in ours and I love Indian more than anything.

I’m undecided what to get. Now bear in mind I’ve had every level up to and including a phaal, and I’m also aware it’s not all about heat.

Now do I go for an mega hot one, or a mild korma or an in between? Or alternatively what about a biryani?

Genuinely conflicted here. Send help.

Get a mixed tandoori. Chicken, lamb, beef, kebab etc. Pilau rice and a salad (sprinkled with lemon) and finally, the plain Indian curry accompaniment, best curry there is, brings out all the flavours, and stops it being too dry.

Marvellous.

I’m currently processing last nights monkfish jalfrezi. I find any hotter than that and you lose the subtleties of the flavour
Monkfish curry is the biz isn’t it?

Get a Paneer Pasanda if they have it.

I don`t think that`s strictly true.

A decent curry chef is able to produce a hot curry, that`s both hot and flavoursome, by not overloading the curry with chile powder. and using the spices to get the right heat / blend.

A lazy / poor chef, just lobs a load of hot chile powder in to make it hot.

A really nice hot and tasty curry is a Naga Naga.

This multiplied by ten. A Vindaloo for example is hot but has little or no flavour, whereas a good phaal can be incredibly hot but also rich in taste.

I'm a fan of a Karahi (chicken or lamb) as it can quite hot, there's lots of taste to it and full of onions and peppers. A Jaflong is an alternative.

And there lies the problem for me. There's no point, if me head looks like it's been stuck in a hornet nest.
