I do some work with Godminster and a little while ago we sat down and did some tasting to see what the best accompaniments for their cheeses were, and that smoked cheddar absolutely sang with this stuff.

Cheese is lovely with quince or rowan jelly, which I've handily made this autumn

Stilton, Brie and crumbly white Lancashire.

Crumbly White Cheshire with Branston on white crusty bread.

If it doesn't crumble it aint proper cheese. I hate the 'processed' cheeses that you get in supermarkets. Texture like plasticine and completely tasteless.

I agree although they are handy for cheese sauce. Red Leicester is a fave in our house. Great over tortellini. Broccoli.

Cashel Blue. Pricey in the States, but well worth it.

Dubliner Cheese, a blend of a mature cheddar and parmigiana. Fantastic.

Not sure if it’s available outside the Emerald Isle though.
