Huevos rancheros are made different by every person. Mine are fried eggs served over black bean cakes with sprouts, chorizo, feta cheese, slice avocado and a tomatillo sauce. Would you eat such a breakfast? Or are you too old generation to give it a try?

Some sort of spice and ingredients like you would see in this dish.

I have never tried sprouts on mine. How do you prepare them? Is it a certain type of sprout?

I love breakfast with a latin twist too but I leave them for the weekends since they are so filling. During the week I try to behave and stick to smoothies or eggs (boiled or fried).

A local restaurant serves their huevos rancheros with home fries so I decided to do the sane and now it has become a staple. This is the recipe I use to make mine but I add red peppers along the onion.

Made it for the first time today. Without the Saturday obvious. Not for breakfast, but my evening meal. Have to say, it didn't dissapoint.
