Tekken 3. Got my old Playstation out a little while ago and me and my bros spent hours playing it from the start, unlocking characters. Still as good as ever, and the graphics haven't even aged that badly either. 'Forest' Law is still the best.
 

I was thinking of a different sort of fighting game, but this is my favorite
