I’m a bang average cook but during lockdown I’ve tried to expand my horizons. However I’m sure there are at least a few experienced amateur cooks / professional chefs on here.

Please share your favourite recipes or general culinary tips with us laymen.

My personal questions would be:

1) What are your best tips on seasoning food

2) How to spice a chilli or curry when you’ve graduated from cayenne and ‘chilli powder’

Sam the Cooking Guy on youtube makes some really nice food, you should check that out.

The best way to season food is to add some seasoning, hope this helps.
 

Cayenne and chilli powders are widely used in all levels of cooking so carry on.

Although for a curry, garam masala would be a good spice blend to start with. Toasting (by dry frying) whole cumin, mustard, coriander seeds etc for your dish will help a lot too.

Thanks mate. Already use a lot of cumin. Will experiment with the others.

In particular I’d like to make the dishes hotter. The base for my curry is a Shemins paste (apparently they’re good?) so generally the taste is nice imo. The problem is I don’t feel cayenne peppers or chilli powder (purchased from Aldi) makes it hot enough. Any tips?
