That's like saying you don't see the importance of an ending to an epic novel. Everything needs an ending.
I won't veer too much towards spoiler territory, but opening up a new, massive subplot 5 episodes from the end then hastily closing it out in the last episode is thoroughly unsatisfying.
Much as I found Mad Men dragged on for at least a series too long (absolutely loved the first 3 series), I'll agree that the ending was excellent (I was a little disappointed at the time but now it's had time to mature in my mind, I like the end a lot more).
Closure can be used as more of a subtle ending, which can work very well in books and TV series. I guess you could argue less risk there too. There is a thin line of a good, definite ending and an ending where it was quickly thought about and put together just because an ending is necessary.
