Made one of ‘Anthony Bourdain’s’ butties yesterday, ton of Mortadella fried, provolone cheese slices and in this instance a sourdough roll toasted in the fat in the pan.
Bit of Dijon on the top slice of the roll and mayo on the bottom.
Amazing.
All the white bits of fat in the mortadella basically melt and add a lot more flavour than when it’s cold.
Was like a cross between a cheeseburger and bacon roll (but not a bacon cheese burger strangely 🤔)
